My Best Breakfast: Lemon Blueberry Pancakes

I love eating this for breakfast! It is one of my favorite meals whenever I treat myself to these kind of pancakes.

The nice part about this recipe is that there are only 2g of fat in it, the calories are 222 per serving, 25g of carbohydrates and 25g of protein.

So it gives you a nice burst of flavor in the morning.

Here is what is Needed for the Ingredients

1/3 cup Oat Bran
1/2 cup Blueberries
5 Egg Whites
1/2 tsp Baking Soda
1 tbsp Sugar-Free Lemon Jello Mix or Lemon Drink Mix
2 tsp grated Lemon Peel
Sugar-Free Syrup


In a large bowl, combine all ingredients. Mix together and whisk until smooth.

Cook batches in pre-sprayed skillet on medium high temperature until bubbles form on the surface, then turn over and cook until dark golden brown.

Serve with sugar-free syrup.
